Thai Turkey Lettuce Wraps

Coming up with weeknight dinner recipes can get challenging because I only like to cook quick meals that don’t call for too many steps or ingredients but are delicious. People always ask me if I go to the grocery store every day to make all these recipes and the answer is no. I usually go on Sunday or Monday for the whole week and buy multiple proteins, lots of vegetables and some pantry staples that I am low on. One of those proteins that is purchased almost every week is lean ground turkey. There are so many ways I can transform ground turkey. I could make meat sauce, meatballs, tacos, soup- I mean the possibilities are endless! It also has tons of health benefits and really low in calories so win win for me. Tonight I created these Thai Turkey Lettuce Wraps with ingredients I had in my fridge and pantry and they turned out amazing! The turkey was completely transformed and dinner was on the table in less than 30 minutes. This recipe checked off every box that I look for when creating weeknight dinners which is why I love it so much! Enjoy!

Thai Turkey Lettuce Wraps

Ingredients

  • 1 lb lean ground turkey
  • 3 -4 garlic cloves, minced (depending on how large they are)
  • 4 scallions, chopped
  • 3 tbsp. soy sauce
  • 2 tbsp. Sambal (fresh chili paste), if you don’t like spice only use 1
  • 1 tbsp. honey
  • 1 head Bibb lettuce, torn into lettuce “cups”

Toppings (optional)

  • Mint leaves, Basil leaves, red onion slices, lime wedges

Instructions

  1. In a large skillet over medium heat brown the ground turkey in 1 tablespoon of avocado oil. You want to cook the turkey until it is no longer pink, about 5-7 minutes.
  2. When the turkey is fully cooked, add in the garlic and scallions. Let the vegetables cook for 2-3 minutes until tender and fragrant.
  3. Deglaze the pan with the soy sauce then add in the chili paste and honey. Lower the heat to a simmer and let everything cook together so the flavors can marry for about 5 minutes.
  4. Taste the turkey mixture to make sure it is seasoned correctly.
  5. To serve: place 3-4 tablespoons of the turkey mixture in each Bibb lettuce cup. Top with some fresh herbs, sliced onion and a squeeze of lime. Enjoy!
