Easy Summer Salad

You can’t go wrong with this easy summer salad, its a staple at my house all summer long! I really enjoy this recipe not only because it is time efficient, but I usually already have all of the ingredients. This recipe is healthy, filling, and did I mention delicious?! It can either be eaten on its own or sometimes when I have extra time on my hands I top it with grilled chicken, shrimp, or whatever protein I need to use up in my fridge!

Easy Summer Salad

  • Serves: 4
  • Yield: 1 large salad


  • 1 box mixed greens
  • 5 Roma tomatoes (I usually use more since I love tomatoes)
  • 1 Hass Avocado
  • 1 c Mozzarella, cubed
  • 4 tbsp. Balsamic Vinegar
  • 1/4 c Extra Virgin Olive Oil
  • Salt and Pepper to taste


  1. Place the washed greens in a large salad bowl. Top with the mozzarella, avocado, and tomatoes.
  2. Pour the vinegar in a bowl and slowly drizzle in the olive oil while whisking. Season the dressing with salt and pepper. Taste the vinaigrette to make sure the seasonings are correct.
  3. Dress the salad with the vinaigrette and toss. Enjoy!
