Pumpkin Banana Nutella Swirl Muffins with Greek Yogurt

One of my favorite activities to do this time of year is baking. I love all the flavors of fall and the warm spices that comes with fall and winter recipes. To make baking extra fun, I invite friends over to make it a group gathering where everyone gets to participate, and take home sweet treats! This season fashion blogger, Krystal Schlegel, and I have teamed up to show you our favorite fall and winter recipes each week! She is so talented, and has an eye for photography (among many things!)- all of the pictures from our series are done by her! This recipe is such a staple in my kitchen this season. The muffins are so easy to prepare, and amazing for that late night sugar craving. The pumpkin and banana pair so well together, and the nutella swirled in adds that extra chocolatey decadence, boy are these good! These muffins are great to bring to any holiday party you might have. In fact, I brought them to my pumpkin carving contest party last week; they were the biggest hit of the party! Pumpkin Banana Nutella Swirl Muffins with Greek Yogurt

  • Yield: 24 muffins

Ingredients

  • 2 ripe bananas, smashed with a fork
  • ½ cup pumpkin puree
  • 2 eggs
  • 1 c granulated sugar
  • ½ cup light brown sugar
  • 1 stick butter, softened
  • 1/3 c buttermilk
  • 1 tsp. vanilla
  • ¼ cup Greek yogurt
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • ½ teaspoon salt
  • 1 ¾ cup flour
  • ½ cup Nutella
  • confectioner sugar (optional)

Instructions

  1. Place the butter in a mixer and add the sugar. Mix until incorporated. One at a time add in the eggs. Once the eggs are all mixed in, add the vanilla, Greek yogurt, pumpkin, buttermilk, and bananas. Scrape down the sides occasionally to make sure all of the ingredients are well incorporated.
  2. With the mixer on low add the flour, salt, baking soda, and cinnamon. Mix until just combined.
  3. Fill the batter into a greased muffin pan. Before baking, swirl in 1-2 tablespoons of the Nutella into the center of the batter. Bake for 20 to 25 minutes. Dust with confectioner sugar before serving!
