Spicy Italian Turkey Meatballs

Meatballs are one of my favorite comfort foods. Nothing can beat a big bowl of spaghetti and meatballs on a rainy day. These healthy turkey meatballs have a lot less fat and calories than most restaurant style meatballs but are still full of flavor! I like to serve mine on top of whole wheat pasta or spaghetti squash but they are also great on their own to snack on!

Spicy Italian Turkey Meatballs

Ingredients

  • 2 lb ground turkey (I use all white meat, extra lean)
  • 1/2 lb Italian sausage
  • 4 slices prosciutto, chopped into small pieces
  • 1 small onion, chopped fine
  • 4 garlic cloves, minced
  • 2 c Italian bread crumbs
  • 2 eggs
  • 2/3 c milk
  • 1/4 c parsley, chopped
  • 1 c Parmesan cheese
  • 1/2 tsp. red pepper flakes
  • salt and pepper to taste

Instructions

  1. Preheat oven to 400 degrees.
  2. In a large bowl mix the onions, garlic, Parmesan, eggs, breadcrumbs, red pepper flakes, milk, parsley, prosciutto, salt and pepper. Once they are all combined, add in the sausage and turkey. You add the meat in last because you do not want to over work the meatballs. (That will make them tough) Once the meatballs are all combined, form them into golf ball size balls. You can do them bigger or smaller, depending on how you like them.
  3. Drizzle the meatballs with olive oil and bake for 30 to 40 minutes- depending on how large you made them. You do not want to over cook the meatballs because they will turn out dry. Let cool slightly and serve over pasta or spaghetti squash! Enjoy!
