Last night for dinner I made one of the best rainy day comfort foods, the greatest chicken pot pie. This chicken pot pie is so warming to eat, but doesn’t make you feel uncomfortably full (I know we all hate that feeling). It is filled with a variety of different vegetables, all of my favorites, leaving me one happy girl! Although this recipe is a little more time consuming, the end result is well worth it! It is the ultimate meal in one which is why I always love to serve it

You can’t go wrong with this easy summer salad, its a staple at my house all summer long! I really enjoy this recipe not only because it is time efficient, but I usually already have all of the ingredients. This recipe is healthy, filling, and did I mention delicious?! It can either be eaten on its own or sometimes when I have extra time on my hands I top it with grilled chicken, shrimp, or whatever protein I need to use up in my fridge! xo, Rachel

This blueberry, avocado, and banana smoothie is by far one of my favorites I’ve come up with. It is

Herb Roasted Chicken is one of the ultimate comfort foods to me. Growing up I would watch Ina Garten, the Barefoot Contessa, on Food Network and she would make a roast chicken every Friday night for her husband, Jeffery. There was a reason she did this. Making a roast chicken is like getting a big hug from a loved one- so satisfying and comforting. This chicken recipe makes the chicken so tender and juicy, it is a true crowd pleaser and looks very impressive to your guests! I love making
