Cheesy Skillet Cauliflower Gnocchi with Pancetta
Cauliflower gnocchi is all the rage these days and I have totally hopped on board. These little pillowy cauliflower balls are one of my favorite things to make for dinner so I am constantly trying to create new recipes using them. They take on almost any flavor you pair them with so the key is using a super delicious sauce or spice mix. In this recipe I toss the crispy gnocchi in a cherry tomato sauce that I make with pancetta to give it the ultimate punch of flavor. Pancetta is very similar to bacon. It is a cured piece of pork belly but does not get smoked like bacon does. You can use them interchangeably but in this recipe I prefer the pancetta. You could also use any kind of gnocchi in this dish so feel free to change it up! I use the Trade Joes Cauliflower one because it lightens the dish up a bit and makes you not feel so bad for eating a huge cheesy skillet full! Enjoy!
