1lemon juiced, plus zest of 1 lemon (about 1 teaspoon zest)
2tbsp.fresh chives, finely sliced

Preheat oven to 400 degrees.
Place the salmon on a baking sheet. Season the salmon with salt, pepper and a drizzle of olive oil.
Roast the salmon for 8-12 minutes, depending on how thick it is. You do not want to overcook the salmon.
While the salmon is cooking, make the creamy yogurt sauce.
In a small bowl, combine the Dannon whole milk plain yogurt, Dijon mustard, garlic, lemon zest, lemon juice and chives. Whisk everything together then season with ½ teaspoon salt and ¼ teaspoon of pepper. Taste the sauce to adjust any necessary seasonings!
To serve: Plate one salmon fillet on 1/4 rice and vegetables. Top everything with the yogurt sauce. Garnish with fresh chives and extra lemon zest.
