Cauliflower pizza crust is one of those recipes I’ve been wanting to try, but for some reason have been very intimidated by. It is just so easy to roll out store bought pizza dough, put on your toppings, and bake, BUT with bikini season coming up I decided to step out of my comfort zone. If I wanted to continue to eat pizza as much as I do (which is A LOT), I needed to find a healthier version. This cauliflower crust does take a little more effort to make, but
Berry Crumbles are one of my favorite desserts to make, especially in the summer when all the fruit is so ripe! These crumbles are sweet but still seem light because they don’t have a bunch of batter to weighs you down; the crumble oat topping adds the perfect crunch! I love to serve mine in individual ramekins because it makes each guest feel special. This is a great dessert to make ahead as well. You can make the filling and the crumble the morning of your dinner party and then bake
Meatballs are one of my favorite comfort foods. Nothing can beat a big bowl of spaghetti and meatballs on a rainy day. These healthy turkey meatballs have a lot less fat and calories than most restaurant style meatballs but are still full of flavor! I like to serve mine on top of whole wheat pasta or spaghetti squash but they are also great on their own to snack on! xo, Rachel
As most of you know, I am a true soup lover. I could have soup for lunch and dinner almost every night of the week. For some reason there is something so satisfying about a warm bowl of soup. I love all kinds of soup, but this Asparagus Soup is one of my favorites. It is so creamy and soothing, without ANY guilt. It is seriously so healthy for you. I actually served it at a dinner party last night and everyone asked how much cream I put in it.
During the holidays, I love to deliver baked goods to my friends and family as a special holiday treat! These mini gingerbread loaves with cream cheese glaze were my treat of choice last year and I think they were a success. I received so many sweet texts and calls about how delicious this bread was! You can also make it into one large loaf if you are making it for the whole family to enjoy! xo, Rachel
