Tomato Cucumber Salad

Ingredients
- 3 c cherry tomatoes, halved
- 1 hothouse cucumber, diced into small pieces
- 4 scallions, thinly sliced
- 1 c basil, chopped
- 2 garlic cloves, minced
- 2-3 tablespoons olive oil
- 2 tbsp. white wine vinegar
- salt and pepper
Instructions
- Put the tomatoes, cucumbers, scallions and basil in a large bowl. Toss everything to combine.
- Add the olive oil, vinegar, salt and pepper then toss again. Taste for any extra seasonings!
- Store in the fridge for up to 3 days.
