“The Best Banana Bread Ever”

Ingredients

  • 3 ripe bananas
  • 2 eggs
  • 1 c granulated sugar
  • 1/2 c light brown sugar
  • 1 stick butter (softened)
  • 1/3 c milk, I prefer buttermilk or almond milk
  • 1 tsp. vanilla (I usually use a little more since I love vanilla)
  • 1/4 c greek yogurt, you can substitute sour cream
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 3/4 c flour

Instructions

  1. Preheat oven to 350 degrees F.
  2. Place the softened butter in a mixer and add the granulated + brown sugar. Mix until combined and smooth.
  3. One at a time, add in the eggs. Once the eggs are incorporated, add the cinnamon, vanilla, sour cream, milk, baking soda, and salt.
  4. Smash the bananas in a large bowl with a fork. Add to the wet mixture and combine. Stir in the flour until it is just incorporated. You do not want to over mix here or the bread will come out tough.
  5. Pour into a greased loaf pan and bake for about an hour or until a toothpick comes out smooth. I like to serve mine warm with a dap of butter on top but it's good eaten any way! Sometimes I even make Banana Bread French Toast out of the leftovers... mmm it is delicious!
