Spiced Pumpkin Bread

Ingredients

  • 1 c graulated sugar
  • 1/2 c of tightly packed brown sugar
  • 1/2 c vegetable oil
  • 2 eggs
  • 1 tsp. pumpkin pie spice
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 tsp. vanilla extract
  • 1 can of pumpkin puree (15 oz.)
  • 2 c flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder

Instructions

  1. Preheat oven to 350 degrees.
  2. Put the oil, spices, vanilla, and sugar in a mixing bowl. Whisk to combine. One at a time add the eggs to incorporate. Once all the wet ingredients are one homogenous mixture, add in the pumpkin puree and stir to combine.
  3. Add in the flour, salt, baking powder, and baking soda. Mix just enough to incorporate all of the dry ingredients. You do not want to over mix at this stage or your batter will become tough.
  4. Bake for 1 hour to 1 hour 15 minutes, or until when you insert a toothpick to the middle of the bread it comes out clean. My mini loaves took about 15 minutes less then my large decorative loaf, so I make sure to watch them near the end so they don't overcook. If you decide to make muffins with this batter instead, they would take less time as well!
