Ingredients
for the bars
- 1 tsp. baking soda
- 2 c AP Flour
- 2 eggs
- 1 c sour cream (or greek yogurt)
- 1/2 c butter
- 2 tsp. cinnamon
- 1 tbsp. vanilla
- pinch of salt
- 1 1/2 c sugar
- 4 extra ripe bananas (like the black ones), smashed
for the frosting
- 4 c powder sugar
- 1/2 c butter, softened
- splash of vanilla
- 3 tbsp. milk
Instructions
- Preheat the oven to 375 degrees.
- In a mixer, combine the butter and sugar. Mix until smooth. One add a time, incorporate the eggs and then the vanilla. Next, add in the sour cream. Once the wet ingredients are completely combined, add all your dry ingredients. (Everything except the bananas.) Lastly, mix in the smashed bananas. Pour into a buttered glass baking dish. Bake for 18 to 20 minutes or until cooked through. Let rest.
- While the banana bars are baking, melt the butter in a sauce pan over medium heat. Cook the butter until it starts to turn golden brown (it will bubble!). The butter will go from golden to black in seconds so pay attention during this process! When the butter is golden take it off the heat and add in the milk, vanilla, and sugar. Whisk until the mixture is smooth. The mixture should be thicker than a glaze but thinner than a regular frosting.
- Pour the frosting all over the bars while they are still warm. The bars will slightly melt the frosting, helping it spread out and ooze into the banana bars. This combination is heaven! Enjoy!
