Tomato Cucumber Salad

With summer just around the corner, tomatoes are hitting their peak season! I love all the different colors and sizes of tomatoes durning the summer time, not to mention how sweet they get! This tomato and herb salad is something I make all the time at the beginning of the week because it is the perfect healthy snack. I bring some in a container to work for when I get hungry and grab bites of it from the fridge when I just need something to nibble on. It is super simple and refreshing, enjoy!!

Tomato Cucumber Salad

  • Yield: 5 cups salad

Ingredients

  • 3 c cherry tomatoes, halved
  • 1 hothouse cucumber, diced into small pieces
  • 4 scallions, thinly sliced
  • 1 c basil, chopped
  • 2 garlic cloves, minced
  • 2-3 tablespoons olive oil
  • 2 tbsp. white wine vinegar
  • salt and pepper

Instructions

  1. Put the tomatoes, cucumbers, scallions and basil in a large bowl. Toss everything to combine.
  2. Add the olive oil, vinegar, salt and pepper then toss again. Taste for any extra seasonings!
  3. Store in the fridge for up to 3 days.
