If you haven’t tried quinoa yet I would highly recommend it. It is such a healthful grain, and is packed with protein. I make this recipe all the time at the beginning of the week so I have a hearty and fresh lunch or snack on the go whenever I need it. This vegetable quinoa bowl is so versatile, it can be filled with whatever veggies you need to use up in your fridge! Today I made mine with artichokes, tomatoes, cucumber, and avocado. Some other options I use include zucchini, broccoli, bell

Let me start by saying this is one rich dish, but oh boy is it good. I was inspired by watching Ina Garten make a Wild Mushroom Lasagna on Food Network yesterday and my mouth couldn’t stop watering so… I decided to come up with my own version. I love to add spinach, or any veggies for that matter into most of my dishes… maybe they don’t actually make them healthier but it makes me feel better about eating them! Anyways, these lasagna roll ups were a huge hit at the dinner table-

Last night for dinner I made one of the best rainy day comfort foods, the greatest chicken pot pie. This chicken pot pie is so warming to eat, but doesn’t make you feel uncomfortably full (I know we all hate that feeling). It is filled with a variety of different vegetables, all of my favorites, leaving me one happy girl! Although this recipe is a little more time consuming, the end result is well worth it! It is the ultimate meal in one which is why I always love to serve it

You can’t go wrong with this easy summer salad, its a staple at my house all summer long! I really enjoy this recipe not only because it is time efficient, but I usually already have all of the ingredients. This recipe is healthy, filling, and did I mention delicious?! It can either be eaten on its own or sometimes when I have extra time on my hands I top it with grilled chicken, shrimp, or whatever protein I need to use up in my fridge! xo, Rachel
