Creamy Creamless Asparagus Soup with Crispy Pancetta, Goat Cheese, and Chives
As most of you know, I am a true soup lover. I could have soup for lunch and dinner almost every night of the week. For some reason there is something so satisfying about a warm bowl of soup. I love all kinds of soup, but this Asparagus Soup is one of my favorites. It is so creamy and soothing, without ANY guilt. It is seriously so healthy for you. I actually served it at a dinner party last night and everyone asked how much cream I put in it. They could not believe there was none! The prosciutto on top gives the soup a salty, crispy bite that goes perfectly with the creamy asparagus puree. The goat cheese slightly melts into the soup, adding a nice tartness as well.
