Cheese Stuffed Prosciutto Okra

I went over to my mother-in-law’s house for dinner the other week and she had made a version of these cheese stuffed okra for an appetizer. I had one, and then a second and could not stop eating them- these things are addicting! I love how easy they are to eat, such a perfect football appetizer. Ben loves to have friends over during football season so I am always trying to come up with new bite-sized recipes for the boys to nibble on during the game. These okra halves are bursting with flavor- Ben LOVES them (thanks Maudie!). For the filling I used a combination of Boursin and cream cheese but you could just do one or the other and add any kind of spices you like! Enjoy and go cowboys!

Cheese Stuffed Prosciutto Okra

Ingredients

  • 2 oz whipped cream cheese, or regular softened
  • 2 oz Boursin cheese
  • 1/2 lb okra, halved and seeds removed
  • 1/2 tsp. lemon zest
  • 1/4 tsp. red pepper flakes, can add more if you like heat
  • pinch of salt
  • 8 slices of prosciutto, cut in half

Instructions

  1. Preheat the oven to 400 degrees.
  2. In a bowl, combine the cheeses, lemon zest, red pepper and salt- mix to combine everything.
  3. Stuff the okra halves with the cheese mixture. Make sure not to overstuff them. I use about 2 teaspoons per okra half.
  4. Wrap the prosciutto slices around each stuffed okra and place on a lined baking sheet.
  5. Bake the okra for 8-10 minutes or until slightly golden and crispy. Enjoy!
