Caramelized Onion, Blue Cheese and Arugula Sliders

With the Big Game right around the corner, I wanted to come up with a few new recipes to bring to our annual football gathering. I like to bring a dish that is healthy and hearty and something everyone will enjoy! Sliders were the first thing that came to mind. I love sliders for an appetizer because they are easy to eat, delicious, and everyone always seems love them.

Caramelized onions and blue cheese are one of my favorite flavor combinations to enjoy on top of a burger. This slider is not your average slider. The caramelized onions add such a nice sweetness which pair perfectly with the peppery bite of the arugula. The blue cheese sauce brings this slider to the next level. It adds just the right amount of punch of flavor while giving you such a richness. You don’t need a lot of it, but boy is it good! This slider recipe is sure to be a crowd pleaser. I am using 92/8% Laura’s Lean Ground Beef™ for the slider patties because it has the perfect amount of fat to meat ratio. I love using Laura’s Lean Beef in my recipes because I know exactly where it comes from and the quality I am getting. Their beef is all natural, their cattle has no antibiotics or growth hormones and fed an all vegetarian diet. Caramelized Onion, Blue Cheese and Arugula Sliders

Ingredients

  • 1 lb Laura’s Lean Ground Beef™
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 1/2 tsp. Worcestershire sauce, divided
  • 2 yellow onions, thinly sliced
  • 2 tbsp. butter
  • 2 tbsp. mayonnaise
  • 2 tbsp. Greek yogurt
  • 2 oz blue cheese, plus more for topping (room temperature)
  • 6 slider buns, I prefer Kings Hawaiian sweet rolls
  • 1 c Arugula

Instructions

  1. Heat a large nonstick skillet with 2 tablespoons of butter over medium heat. When the butter is melted, add the onions and turn the heat to medium low. Season the onions with ¼ teaspoon salt and stir. Cook the onions over medium low heat for 45 minutes to an hour, stirring every 5 minutes. You want to move the onions around every once in a while to make sure they don’t burn. The onions will be golden brown, tender and sweet in flavor when done. Once done, set aside.
  2. While the onions are cooking, form the slider patties. Place 1 lb Laura’s Lean Ground Beef™ in a large bowl with garlic powder, onion powder, ½ teaspoon salt, ¼ teaspoon pepper and 2 teaspoons Worcestershire sauce. Mix everything gently to combine. You do not want to overwork the meat. Once the spices are incorporated with the meat, form 6 even sized patties. Place the patties on a baking sheet and let chill in the fridge until ready to use.
  3. Make the blue cheese sauce. Combine the blue cheese, mayonnaise, Greek yogurt and remaining ½ teaspoon Worcestershire sauce in a bowl. Season the sauce with salt and pepper. You can blend this in a food processor but I prefer to mix with a spatula so it has some chucks of blue cheese throughout. Taste the sauce to adjust any necessary seasonings. Set aside until ready to use.
  4. Heat a large nonstick skillet over medium high heat with 1 tablespoon avocado oil. When the oil is hot, add the patties to the pan. Make sure the patties each have room in the pan and they aren’t overlapping with one another. If you need to cook these in 2 batches, you could do that as well. Cook the patties on each side for 5-7 minutes, until they have formed a nice crust on each side and cooked to your liking. I like my sliders to be medium. When the patties are done cooking, turn off the heat and add 1-2 tablespoons of the blue cheese sauce on top of each one.
  5. Plate the sliders. Place a slider with blue cheese sauce on a bottom bun. Top with 1 tablespoon caramelized onions, a couple leaves of arugula and a few crumbles of blue cheese. Put the lid of the slider bun on and repeat with the all other sliders. Serve immediately.
  6. Enjoy!
